Simple Raspberry Soda

Serves: approximately ½ C. Syrup
Ingredients
  • 1 C. Organic Raspberries
  • ¼ C. Water
  • 2 Tbs. Organic Sugar
  • ½ Tbs. Freshly-Squeezed Lemon Juice
  • Seltzer Water
  • Ice
Instructions
  1. In a small saucepan over medium heat, combine the raspberries, water, sugar, and lemon juice.
  2. Cook, stirring every once in a while, until the sugar has dissolved and the raspberries begin to break down (about 3-4 minutes).
  3. Turn the heat down to low and allow the mixture to simmer for an additional 5 minutes.
  4. Remove the saucepan from the heat and let the mixture cool to room temperature.
  5. Strain the raspberries through a sieve and press gently with the back of a spoon to squeeze out the juices.
  6. Fill a glass with ice and pour 2-3 tablespoons of raspberry syrup, followed by about a cup of seltzer over top.
  7. Stir to combine and enjoy!
Notes
You can replace the sugar with whatever sweetener you like. I also tried it with a combination of coconut nectar and stevia and I was a fan, but I opted for granulated sugar for photography purposes because it creates a brighter pink raspberry syrup. You can store any leftover raspberry syrup in an airtight container in the refrigerator for up to 2 weeks.
